Paleo Breading

This recipe has become a “go to” in my house. I make large batches of this paleo breading and keep it in my freezer. This breading is so good. It only takes a few minutes to put together and can be used in so many ways. I like to use this to bread chicken cutlets, shrimp, chicken tenderloins, and fish. Anything you would use a traditional breading on this will work. One tip I do want to share is that I like to bread my proteins about an hour ahead of when I want to cook them. I put them on a sheet pan, covered in the fridge for one hour. This seems to help the breading adhere to the meat or fish when you go to fry it in the pan.

Although this does make 2 cups of breading, which is more than enough for 4 chicken cutlets or a pound of shrimp, I typically make a double batch when I make this. That way I always have extra on hand for a quick meal (I am talking to you breaded chicken cutlets). I put the breading in a container and place it right in my freezer for the next time I need it.

This breading really is so simple to make and amazing to have on hand for anything you need “breaded”. I make sure I keep all of the different flours stocked in my pantry so that I can make this breading any time I want. We tend to have breaded chicken cutlets once a week, everyone loves them, and you just cannot go wrong with that and a salad any day of the week.
