Paleo Sausage Potato Kale Soup

This soup is an absolute favorite! Creamy, comforting and filled with potatoes, sausage, and lots of kale. One thing I love in the fall and winter, make soup! Well, I mean we do not get a lot of cold weather here in Southwest Florida, but those seasons still make me crave comfort foods. Soups are so comforting and once you have it all prepped, in a large stockpot it goes and simmers on the stove. How easy and the smell of the soup simmering just gives me such a happy feeling.

Even though this soup feels rich and comforting, it is made with simple ingredients and is completely Paleo-friendly. There is no need for complicated ingredients or a lot of extra work. Just prep everything, let it simmer, and dinner is ready!

What Makes This Soup Paleo?

Traditional creamy soups often contain dairy, flour, or other ingredients that aren’t part of a Paleo lifestyle. This version keeps things simple while still giving you that creamy, comforting texture you want from a bowl of soup.

The potatoes and sausage make it hearty, while the kale adds a healthy dose of vegetables. It is proof that eating Paleo doesn’t mean giving up those cozy comfort foods you love!

What to Serve With Sausage Potato Kale Soup

Honestly, this soup is hearty enough to be a complete meal all on its own. However, I love serving it with a simple green salad or some roasted vegetables.

You could also serve it with your favorite Paleo-friendly bread or crackers to soak up every last bit of that delicious broth.

Storing Leftovers

If you happen to have leftovers, store the soup in an airtight container in the refrigerator. It makes a great lunch the next day and is an easy dinner when you don’t feel like cooking.

Simply reheat it gently on the stovetop or in the microwave until warmed through.

A Cozy Soup for Any Season

Even though fall and winter don’t always mean chilly temperatures here in Southwest Florida, I still love making cozy recipes like this one. There is just something about a big pot of soup simmering on the stove that makes home feel extra cozy.

This Paleo Sausage Potato Kale Soup is creamy, hearty, and packed with so much flavor. With tender potatoes, savory sausage, and plenty of kale, it is the kind of comforting meal you will want to make all season long.

So grab a big bowl, cozy up, and enjoy!

Frequently Asked Questions

Some sausages are Paleo-friendly, while others contain ingredients such as dairy, grains, or added sugars. Always check the ingredient label and choose a sausage that fits your Paleo needs.

Can I use a different type of potato?
Absolutely! Yukon Gold, red potatoes, or russet potatoes can all work well in this soup.

Can I use spinach instead of kale?
Yes! If you aren’t a fan of kale, spinach makes a great substitute. Add it near the end of cooking since spinach wilts much faster.
