What makes this pie dough work?

  • A perfect blend of almond flour, cassava flour, and arrowroot powder
  • Cold palm shortening to make it flaky
  • Just enough moisture to make this dough easy to work with

Make this pie dough.

  • Combine almond flour, cassava flour, arrowroot flour, salt, coconut sugar, and eggs. Pulse in a food processor.
  • Add in palm shortening and pulse for 2 minutes.
  • Next, add the cold water and blend until the dough comes together.
  • Take a piece of plastic wrap and lay on the counter. Gather pie dough in to one or two balls, depending of how many crusts you are making. Flatten to a round disc and wrap. Refrigerate for 1 hour. After the curst is made you can freeze dough for up to 2 months.
  • Take dough out and place on a piece of parchment paper. Now cover with another piece of parchment and roll in to a circle that is larger than the pie pan.
  • Finally, place the dough in pie pan and press any cracks together if needed. Bake crust for 10 minutes before filling. This prevents the crust from getting overcooked.
