Paleo Hash Brown Casserole

This paleo hash brown casserole is a must have recipe. Years ago there was a well known restaurant that served a really good breakfast. They had a hash brown casserole that would sell out usually by 9 or 10 am every day. I loved it and would order it all of the time. I could not wait to recreate this recipe.

Brunch is one of my favorite ways to entertain. I figure out who I am going to invite and create my menu. This hash brown casserole is a go to on any brunch menu. I like to serve it with my paleo bacon and onion quiche . Add some in-season fruit and a batch of my paleo chocolate chip scones and you have a great menu.

Now, let’s make this hash brown casserole.

  • Preheat oven to 350 degrees.
  • In a large bowl, mix together the thawed shredded hash browns, ghee, mayo, onion, nutritional yeast, salt, and pepper.

Why I love this hash brown casserole.

  • Make A-head: this hash brown casserole is great to make the day before you are having guests over or even the day before a big Holiday brunch. You can put it together and bake the next day.
  • Reheats well: I love that this can be reheated and makes an easy side dish for any breakfast or brunch.

Having an easy breakfast is something I am all for. I like to make this and we can eat it for a few days with some eggs and bacon. I even this think this hash brown casserole would be great to serve at Easter with ham.
