One thing I love to do when I am planning to have friends over for dinner is to pick a theme for the evening. This salad is so quick and easy to make. You can get all of the ingredients ready, make the dressing and keep in a glass jar until you are ready to eat. Toss the dressing with the salad and serve with my Paleo Greek Chicken Souvlaki. Roast some veggies or throw them on the grill and you have an easy and light meal to serve guests. This actually is one of those meals that I tend to make quite often.

This salad is a go to for me and can be made with any meat or seafood. It is perfect as a side dish for dinner or as the main entree for lunch.
