I love all deviled eggs, but these paleo millionaire bacon deviled eggs are truly spectacular!

Get creative.

These can be made ahead of time and you can get creative with how you top them. Think fresh dill, extra millionaire bacon, or micro greens and a chive sprig. These will wow your guests and will become a must have at all of your events.

Planning a party.

Planning a party or get together is something I love to do. First, I always like to pick a theme. After that, I plan the menu based around the theme I choose. Appetizers are a great thing to make for any party. Think lots of little bites and a cocktail. The perfect meal if you ask me. The next best appetizer to have at your party or gathering is my Paleo Whipped Feta Dip. It is easy to make and can be made in advance.

Ingredients

  • Coconut sugar
  • Cayenne pepper
  • Cinnamon
  • Bacon
  • Eggs
  • Mayo
  • Whole grain mustard
  • Fresh dill
  • Scallions
  • Salt

Let’s make some deviled eggs.

  • Preheat oven to 350 degrees. In a small mixing bowl, mix together coconut sugar, cayenne pepper, and cinnamon.
  • Put bacon on a wire rack and set over a rimmed baking sheet. Sprinkle each slice of bacon with half of the spiced sugar mixture. Bake at 350 degrees for 10 minutes. Flip the bacon half way though. You want bacon to get a little crisp and the sugar mixture to caramelize. Remove bacon from the oven and let cool.
  • Dice bacon and set aside. Take a quarter of the bacon mixture and reserve for garnishing the eggs.
  • After your eggs have been hard boiled, place the yolk, mayo, mustard, dill, scallions, cayenne pepper, salt, and diced bacon in a food processor. Next, process the filing until it is smooth.
  • Fill each egg white with the deviled egg mixture. Top with some of the reserved diced bacon and a sprig of dill. Serve that day.

  • pinch of cayenne pepper

  • pinch of cinnamon

  • 5 pieces thick cut bacon (this included enough to garnish the eggs)

  • 10 hard boiled eggs

  • 1/2 cup paleo mayonaise

  • 1/4 teaspoon whole grain mustard

  • 1 1/2 tablespoons fresh dill, minced

  • 5 scallions, thinly sliced

  • 1/8 teaspoon cayenne pepper

  • 3/4 teaspoon salt

  • 20 sprigs fresh dill (for garnish)

Directions

  • Preheat oven to 350 degrees. In a small mixing bowl, mix together coconut sugar, cayenne pepper, and cinnamon.
  • Put bacon on a wire rack and set over a rimmed baking sheet. Sprinkle each slice of bacon with half of the spiced sugar mixture and bake at 350 degrees for 10 minutes. Flip half way through, you want the bacon to get a little crispy and the sugar mixture to caramelize. Remove bacon from oven, allow to cool. Dice the bacon and set aside. Take a quarter of the bacon mixture and reserve for garnishing your eggs.
  • In a food processor, mix the egg yolks, mayo, mustard, 1 1/2 tablespoons minced dill, scallions, cayenne pepper, salt, and the diced bacon (not the reserved bacon). Process until smooth.
  • Fill each egg white with the deviled egg mixture. Top with some of the diced bacon and a dill sprig. Serve that day.

Notes

  • These can be made a day ahead. Prep the egg filling and place in a piping bag or bowl. Place the egg whites in a container lined with a paper towel- do not stack the eggs.
On the day you need the eggs, let the deviled egg mixture come to room temperature- pipe in to the egg white. Garnish and enjoy.
