Paleo Beef Pot Roast

Paleo beef pot roast is one of my favorite comfort meals. I keep my pot roast simple, by adding onions and carrots and serving over some garlic smashed potatoes. But you can add some halved little red potatoes and make this a one pot meal.

My favorite way to make my paleo beef pot roast is in the Instant Pot. When you make pot roast in the slow cooker, it takes 8-10 hours. But if you use the Instant pot, it is ready in less than 2 hours. That makes this recipe easy to throw together a few hours before you need to eat.

Why I love pot roast.

One pot meal: meat, vegetable, gravy = little clean up.

Perfect for meal prep: this tastes just as good the next day.

Cost effective: tougher types of meat are more economical

Feeds a crowd: it is simple to double or tripe this and serve a lot of people.

Ingredients

  • Olive oil
  • Beef chuck roast
  • Salt
  • Onion

  • Carrots
  • Rosemary

  • Balsamic vinegar
  • Arrowroot powder
  • Parsley

  • Cook the “gravy” with the instant pot on sear. You want it to thicken. Season with salt and pepper to taste.

I love using my instant pot.

If you do not own and instant pot, I really think it is a great investment. This Instant Pot is similar to the one I own, but this is a newer version. It cuts your cooking time down so much and the best part is that you can brown all your meat right in the instant pot. So it truly becomes a one pot meal and that means less clean up. Which I am all for! My favorite way to honestly use the Instant Pot is to make hard boiled eggs. Anytime I am making my Paleo Millionaire Bacon Deviled Eggs I use the Instant Pot. The hard boiled eggs come out perfectly.

I hope you enjoy this recipe.
